Low Carb French Onion Soup

Ingredients

Onions- four giant- any kind, (yellow, red, sweet or white), sliced thinly
Garlic 3 cloves
Fat Free Chicken Broth half-dozen cups
Low Fat Swiss or Gruyere Cheese eight skinny slices
Mushrooms two cups thinly sliced
Butter a pair of tbsp
Olive Oil two tbsp

Directions

Makes four x two one/4 Cup Servings

Warm Butter and oil in a very giant sautee pan at very low heat. (About twenty- 25percent of the out there power of the burner)

Add onions and garlic.

Slowly cook until the onions begin to caramelize, stirring typically. (This will take fifteen-20 minutes, however is time well spent)

While onions are cooking, slice the mushrooms in 1/eight inch slices. Seperate in to four equal portions.

When onions/garlic are caramelized, add the chicken stock, and flip up the heat!

Season soup with salt and pepper as needed, and simmer 5 minutes till piping hot.

Prepare 4 oven proof bowls and flip the oven on to broil.

Ladle the hot soup in to the four bowls. Top with the mushrooms, then the cheese, and place in the oven.

Bake until the cheese is brown and bubbly.

GREAT with a tossed salad!
