Potato pancakes parmesan




Preparation time: 10 minutes
Cooking time: 12 minutes


2 cups mashed potato leftovers
2 tablespoons chopped fresh chives or green onions
1 large egg white
Quarter cup seasoned bread crumbs, divided
2 tablespoons freshly grated parmesan
2 tablespoons olive oil coffee, divided

preparation 

1 Combine potatoes, chives, egg and 2 tablespoons of bread crumbs in a large bowl.

2 Mix 2 tablespoons of bread crumbs and cheese in a small bowl. Divide mixture of potatoes in 8 (1/4 cup) of equal parts; dredge in breadcrumb mixture, shape each portion into a burger 14 cm thick.

3 Heat 1 teaspoon oil in large nonstick skillet. Add 4 patties; cook 3-4 minutes on each side or until golden brown. Repeat with 1 teaspoon oil and the remaining 4 burgers. Serve the hot pancakes with applesauce and low-fat sour cream.
